Pozole: A Hearty Mexican Classic

It’s a beautiful October day in northern Virginia. The sun is shining, temperatures are low, and the Steamtown Marathon is only four days away.

Last night I made a tasty and hearty soup for dinner: chicken and poblano pozole, which I found in this month’s issue of Real Simple. This quick and easy take on the classic Mexican dish is full of protein and flavor.

Serve the pozole with fresh cilantro, lime wedges, and shredded cheddar cheese.
