It’s a beautiful October day in northern Virginia. The sun is shining, temperatures are low, and the Steamtown Marathon is only four days away.
Last night I made a tasty and hearty soup for dinner: chicken and poblano pozole, which I found in this month’s issue of Real Simple. This quick and easy take on the classic Mexican dish is full of protein and flavor.
