Today I spent my afternoon experimenting in the kitchen with some of the fresh pumpkin that I cooked yesterday. Wanting to combine the flavors of autumn with a little oatmeal – two of my favorites, I tinkered around with the basic oatmeal raisin cookie recipe on the container of Quaker® Oats and came up with a batch of pumpkin spice cookies drizzled with maple cinnamon glaze.
These light, scone-like cookies are reminiscent of pumpkin pie with a touch of sweet maple on the top. The cookies themselves are not terribly sweet for those who prefer more of a biscuit-like cookie. To make them sweeter, simply add a little extra maple cinnamon glaze.
