Banitsa: Bulgarian Comfort Food

IMG_5205 (1)It’s been a long time since I’ve posted a recipe. It’s also been a long time since I’ve cooked anything, as our move to Riga and extended hotel stay have not lent themselves to cooking and baking. It won’t be long before we have a kitchen again, and as soon as we do, I will be back in my apron, making my favorite recipes and hopefully adding a few new ones.

Today, I was daydreaming about my favorite Bulgarian comfort food, banitsa. In organizing some of my digital photos, I came across several that I took last fall with the intention of posting my banitsa recipe, and I realized that I hadn’t done so.

This Bulgarian tradition- a cheese pie filled with flavor and buttery goodness- is one of my favorite recipes to make. It’s hard to get it wrong, and fills the house with a warmth that I can’t quite describe. Give it a try and you’ll know what I mean. Let me know how it turns out for you!

  1. I’ve been meaning to tell you that I made this not long after you posted it! I was SO in need of comfort food at the time, so your post came at the perfect time. I managed to find the cheese at a Middle Eastern market near me. It lasted ONE day, between me and my boyfriend…he’s begging for more. I will definitely make it again soon. Thank you for posting this–it was SO easy and delicious!
